Does such a thing exist as a list of different sorts of RAM for different ThinkPads? ie should I expect to be able to use the same RAM in an X61 as in a T61 for example?

That hasn't been a thing since the mid-90s AFAIK.

As for the T61 and X61, they use regular DDR2 SODIMMs and are interchangeable.

Not sure if a list exists, but for your specific examples of X61/T61, yes they both take the same compatible memory, DDR2.

The closest thing to your question (For anything that's some sorts of SDRAM) is perhaps to identify what generation of SDRAM is used, and then use the unofficial maximum RAM guide on Thinkwiki to determine what RAM capacities are compatible.
The original SDRAM SODIMM sticks on the T2x, for instance, is even compatible on PowerPC mac laptops back then.
