I'm going to try not add confusion to the thread here (like I always do!) but on one of my other OpenCore thinkpads (X201 i7 Arrandale original processor) we are currently experiencing the exact same issues! We've been trying to solve it here:

A workaround for now on that laptop, is enabling the External picker. You can use the mouse to select a drive to boot, but, if you make any input with the keyboard, the mouse stops working.
I'm going to post a link to this thread here on that discussion. It's strange how my X2100 has picker keyboard input, but your X210 and all the X201's doesn't! I must have something enabled on my X2100 repo. I will cross reference and compare!
As for the choppy trackpoint - I haven't tried disconnecting the palmrest, I'll give that a test to compare! You are right though, the touchpad is perfect even though it's small. Its super sensitive and all the gestures work. I find it just as nice as a Macbook to work with.
